Soups and stews in the winter are what salads are in the summer.
I love these warm and versatile dishes. They give you a hug from the inside and warm you up.
The pictured soup is healthful and simple.
There is hardly a recipe.
4 cups stock – chicken or vegetable
extra firm tofu
soba noodles or any noodle of your choice
carrots, cut into sticks
scallions for garnish
1 tsp. vegetable oil
Heat the broth in a pot and boil the noodles in the broth.
While the broth is heating, cut the tofu into squares and heat up a nonstick pan. Add the oil and brown the tofu on all sides. You can skip this step to save an extra few calories even though the browning really adds to the flavor.
Add the carrots and other seasonings like the soy sauce and sesame oil.
When you are ready to serve, pour the broth and noodles in a large soup bowl – add the tofu and garnish with scallions.
